Ravioli
Serves: 6
1 butternut squash
1 tablespoon olive oil
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 teaspoons sugar
salt & pepper
40 won ton wrappers
1 egg slightly beaten

Cut the squash in half, scoop out seeds and rub with oil. Place face or flesh side down on a cookie sheet and bake in an oven at 350 degrees for 45 minutes.

Place a 2" square won ton on the flat surface and place a tablespoon of the squash filling inside. Brush edges with egg and top with a second won ton skin. Press down the sides to make a ravioli. Continue the rocess to make 20 more.

To cook the ravioli, Bring a pot of water to boil and place in the ravioli for abut three minutes.

Serve with a cheese or tomato sauce.
